The easy weeknight curry

 

 

WHAT YOU WILL NEED:

  • 1 tbsp of vegetable oil

  • 1 tbsp of Silk Road Cheeky spice

  • 2 lb lamb, cubed for stew/curry

  • 2 carrots peeled and sliced

  • 1 eggplant peeled and diced

  • 1/4 cup of fresh coriander

  • 1 can of diced tomatoes

HOW TO MAKE IT:

  1. Heat oil in a medium-sized pot
  2. Add lamb
  3. Add Silk Road spice
  4. Cook on high heat until the lamb is browned
  5. Add carrots and eggplant
  6. Reduce heat and stir until vegetables are evenly coated (they will look browned)
  7. Add coriander
  8. Add tomatoes
  9. Stir until all ingredients are evenly blended
  10. Add 3 cups of water
  11. Bring to boil, reduce heat and let it simmer for 20 minutes
