WHAT YOU WILL NEED:

1 tbsp of vegetable oil

1 tbsp of Silk Road Cheeky spice

2 lb lamb, cubed for stew/curry

2 carrots peeled and sliced

1 eggplant peeled and diced
-
1/4 cup of fresh coriander
-
1 can of diced tomatoes

HOW TO MAKE IT:

- Heat oil in a medium-sized pot
- Add lamb
- Add Silk Road spice
- Cook on high heat until the lamb is browned
- Add carrots and eggplant
- Reduce heat and stir until vegetables are evenly coated (they will look browned)
- Add coriander
- Add tomatoes
- Stir until all ingredients are evenly blended
- Add 3 cups of water
- Bring to boil, reduce heat and let it simmer for 20 minutes
